Short spaghetti with shellfish and sun-dried tomatoes

INGREDIENTS

  • 1 packet of 500g short spaghetti

  • 1.5 kg shellfish (mussels, cockles, wedge clams)

  • 250g cherry tomatoes

  • 200g tomato passata

  • 2 cloves garlic

  • 1 lemon

  • 1 glass dry white wine

  • Parsley leaves

  • Olive oil, salt, pepper

PREPARATION

Prep time: 25 min Cook time: 20 min

  1. Peel and mince the garlic. Clean and rinse the shellfish with clear water.

  2. Place the cherry tomatoes in a dish and drizzle them with olive oil before baking them for 20 minutes in an oven preheated to 180°C.

  3. Heat oil in a casserole dish, and add the garlic to brown it. Add the lemon juice, white wine, and bring to a boil. Add the shellfish, mix well, and cook for a few minutes until they open. Finish with the tomato purée, season with salt and pepper to your liking, and turn off the heat when the preparation is hot.

  4. Cook the pasta according to package instructions.

  5. Serve the pasta mixed with the shellfish preparation. Top with the roasted cherry tomatoes and a few parsley leaves. Enjoy!
