Southern-style elbow macaroni tart

For a 25 cm diameter mold

200 g Lustucru fresh egg coquillettes

4 eggs

100 g Comté cheese

100 g Emmental cheese

50 g sunflower seeds

30 cl fresh cream

Ground nutmeg

Salt and pepper

For the ratatouille
-
2 zucchini
-
1 eggplant
-
2 yellow bell peppers
-
2 ripe tomatoes
-
1 onion
-
1 golden apple
-
4 cloves garlic
-
Olive oil
-
2 tablespoons dried oregano or thyme

1 teaspoon Espelette pepper

2 tablespoons brown sugar
PREPARATION

Preheat your oven to 180°C.

Wash and dice all the vegetables very finely, sprinkle with sugar, salt, chili pepper, and oregano. Pour into an oven-safe dish with a good drizzle of olive oil.

Bake for approximately 45 minutes, stirring the dish occasionally to mix the vegetables. They should look well-confit and tender.

While the ratatouille is cooking, prepare the fresh egg Coquillettes according to the package instructions. Drain and set aside.

Grate the cheeses. In a bowl, whisk the cream and eggs, add the cheeses, salt and pepper, and two pinches of nutmeg.

Once the ratatouille is ready, in a large bowl, combine the egg, cream, and cheese mixture, the cooked pasta, and the vegetables.

Place a sheet of parchment paper at the bottom of your mold, pour in the mixture, sprinkle with sunflower seeds, and bake for 40 minutes.
