Beef flounces with corn sauce

INGREDIENTS

300g Lustucru Collerettes pasta

400g leftover cooked beef

250g canned corn

150g light fluid crème fraîche

80g aged Comté cheese

3 teaspoons paprika
-
50g raisins
-
½ bunch parsley
-
½ bunch basil
-
2 egg yolks
-
Salt and 5-berry pepper from the mill

PREPARATION

Heat a large pot of salted boiling water.

Dice the cooked beef into small pieces.

Drain the canned corn.

Wash and finely chop the aromatic herbs.

Cut the Comté cheese into cubes.

In a mini blender, blend the corn with the Comté cheese, paprika, egg yolks, and crème fraîche until creamy.

Cook the pasta according to package directions.

Meanwhile, in a skillet, with 4 tablespoons of olive oil, sauté the beef with the raisins for a few minutes, season with salt and pepper, and add the herbs.

Drain the pasta and mix it, while still hot, with the corn cream.

Serve in individual bowls with the meat on top.
