Greek-Style Small Spaghetti Salad

INGREDIENTS

250g short spaghetti

4 large, ripe tomatoes

1 cucumber

200g sheep's cheese, such as Ossau-Iraty with Espelette pepper

200g three-color olives

2 red onions

1/2 bunch oregano

1/2 bunch flat-leaf parsley

Olive oil

Cider vinegar

Freshly ground pepper

Fleur de sel

Peel the cucumber, cut it in half lengthwise, deseed it with a small spoon, cut it into pieces, sprinkle with coarse salt, and let drain for 15 minutes.

Cook the spaghetti in a large pot of boiling salted water according to package directions.

Drain.

Heat a pot of water and immerse the tomatoes for three minutes, remove them, run them under cold water, and cut them into large cubes.

Wash and finely chop the herbs with a knife.

Cut the cheese into cubes.

Slice the red onions.

Wipe the cucumber pieces with paper towel.

In a large bowl, mix all ingredients with the cooled pasta.

Add two tablespoons of vinegar and five tablespoons of olive oil.
