Old-fashioned fig and hazelnut noodles

INGREDIENTS

300g Lustucru traditional noodles

8 ripe purple figs

1 level tablespoon whole sugar

3 tablespoons balsamic vinegar

2 pinches Espelette pepper

100g peeled hazelnuts

10cl olive oil
-
One untreated lemon
-
150g whipped fresh cheese (in a tray)

½ bunch flat-leaf parsley

Fleur de sel
PREPARATION

Preheat your oven to 180°C

Heat a large pot of salted boiling water

Wash the figs and cut them into quarters

Place them in a salad bowl

Mix them with sugar, vinegar, Espelette pepper, and olive oil

Place in a dish and bake for 15 minutes

Meanwhile, roughly chop the hazelnuts

Toast them in a non-stick pan for 5 minutes, until lightly browned

Finely chop the parsley

Crumble the fresh cheese with a fork

Zest the lemon with a zester

Cook the pasta according to package directions, then drain it

In a serving dish, serve the pasta with the roasted figs, lemon zest, fresh cheese, fleur de sel, and chopped parsley
