American-style baked macaroni (Mac and Cheese)

250g macaroni

400g grated cheese (200g orange cheese like cheddar or Mimolette)

and 200g Comté or Emmental

50g flour

50g butter

750ml milk

Olive oil

Vinegar

1 bunch chives

2 Little Gem lettuce hearts

1 pear

Salt and pepper (pink peppercorns)

1 gratin dish
PREPARATION

Cook your pasta "al dente" in a large pot of boiling salted water, drain, season with a drizzle of olive oil and set aside.

Preheat your oven to 160°C (325°F).

Finely chop the chives.

Prepare your béchamel sauce; you will need two small saucepans.

Heat your milk.

In the other saucepan, melt the butter over low heat, add the flour and mix vigorously with a wooden spoon, let it brown slightly, then add the hot milk in a thin stream, stirring constantly. Let it thicken over low heat.

This operation takes about ten minutes.

Turn off the heat under the saucepan, then add half of the grated cheese and immediately mix with the macaroni.

Season with salt and pepper, add the chives.

Pour into the gratin dish, sprinkle with the remaining cheese, and bake for 15 minutes.

Meanwhile, wash and prepare your salad, cut the pear into small cubes.

Prepare the vinaigrette with 1 tablespoon of vinegar, 4 tablespoons of oil, salt, and pepper.

Mix with the green salad and enjoy with your gratin.
