Torsette Pasta Salad with Seeds and Dried Apricots

INGREDIENTS

250g Lustucru Torsettes pasta

200g mixed salad seeds (sunflower, pumpkin, sesame, pine nuts)

8 dried apricots, finely diced

3 carrots, home-grated with a large-hole grater for extra crunch

6 hard-boiled eggs, mashed with a fork

2 tbsp Savora mustard

2 tbsp apple cider vinegar and 5 tbsp good olive oil for the dressing

Salt and pepper

Soy sauce

One spoon brown sugar
PREPARATION

Cook the Lustucru Torsettes al dente according to the instructions, in salted boiling water, then drain.

In a non-stick pan, toast the seeds over medium heat until fragrant and lightly golden. Add three tablespoons of salted soy sauce and sugar, stirring well with a wooden spoon to coat. Let the sauce evaporate and set aside.

Prepare the vinaigrette, making sure to dissolve the salt in the vinegar, then add the Savora and finally the oil.

In a large bowl, mix the crushed hard-boiled eggs with the vinaigrette, then add the carrots and apricots. Stir gently. Now, add the Torsettes to the bowl, thoroughly coating the pasta with the sauce. Just before serving, don't forget the toasted seeds.
