Marinated Chicken Short Spaghetti Salad

INGREDIENTS

250g short spaghetti

1 bunch spring onions

3 cloves new garlic

1 punnet cherry tomatoes

4 chicken breasts

3 limes

3 tbsp toasted seeds (sunflower, flax, sesame, pumpkin, etc.)

4 sprigs parsley

6 tbsp olive oil,

Herbs de Provence

Cut the chicken into thin strips.

Chop the parsley, garlic and onions with the green stalks. Squeeze the limes and mix the juice with olive oil in a large bowl. Add all the prepared ingredients. Season the mixture and cover with film. Refrigerate for at least 3 hours.

Preheat the oven to 180°C. Place the cherry tomatoes in a metal dish and lightly drizzle with olive oil. Sprinkle with herbs de Provence and bake for 15 minutes.

Cook the short spaghetti according to package directions, then set aside once cooked.

In a large non-stick pan, sauté the meat over high heat. Once the chicken strips are cooked, add the rest of the marinade. Cook for 5 minutes, then add the short spaghetti. Mix well, then let cool for at least 2 hours.

When serving, add the confit cherry tomatoes and toasted seeds. Mix well.
